Scrambled Eggs

Use this recipe for a good breakfast:

3 eggs
1 oz. black olives
1 oz. shredded cheese (any kind of cheese will do)
1 small can mushrooms (with no liquid)
Ketchup (optional)

Mix eggs well together well first, then add the rest of the ingredients (except the cheese).
You can use either butter or margarine in the pan. Now put the egg mixture (with the black olives and mushrooms) in the pan.
While the scrambled eggs are cooking, make sure you mix the eggs around so the eggs are evenly cooked.
Once you have finished cooking it, put it on a plate. Now, you can add the shredded cheese to the eggs. Wait a minute or two so the cheese could melt.
You can add ketchup to the scrambled eggs to add extra flavor, but it is optional.

Chicken with Tabbouleh

1 1/2 cups boiling water
1 cup bulgur wheat
1/4 cup freshly squeezed lemon juice (2 lemons)
Olive oil
Kosher salt
1 whole (2 split) chicken breast, bone in, skin on
Freshly ground black pepper
1 cup minced scallions, white and green parts (1 bunch)
1 cup chopped fresh mint leaves (2 bunches)
1 cup chopped fresh flat-leaf parsley (1 bunch)
1 hothouse cucumber, unpeeled, halved lengthwise, seeded, and medium-diced
2 cups halved cherry tomatoes

Preheat the oven to 350 degrees F.
In a heat-proof bowl, pour the boiling water over the bulgur wheat. Add the lemon juice, 1/4 cup olive oil, and 1 1/2 teaspoons of salt. Stir. Cover the bowl with plastic wrap and allow the bulgur to stand at room temperature for about 1 hour.

Place the chicken breast on a baking sheet and rub it with olive oil. Sprinkle liberally with salt and pepper. Roast for 35 to 40 minutes, until just cooked. Set aside until cool enough to handle.
Remove the chicken meat from the bones and discard the skin. Cut the chicken into medium dice and add to the tabbouleh. Add the scallions, mint, parsley, cucumber, tomatoes, 2 teaspoons salt, and 1 teaspoon pepper. Season, to taste, and serve immediately or cover and refrigerate. The flavors will improve as it sits

I have so many favorite foods that it is hard to choose. I think the best is roast leg of lamb or london broil with tziki sauce. I marinade the meat in olive oil, lemon juice, lemon zest, fresh garlic, italian seasons, salt and pepper . I put all of this in a food processor and then pour over the meat and let sit. Then grill to rare and wrap in aluminun foil and leave sit for 15 minutes before slicing. The tziki sauce is made with yogurt (first I drain the yogurt by putting a paper towel in a large fine strainer) put garlic, a peeled and seeded cucumber and onion in a food processer. In a bowl mix together olive oil, vegetable mix, yogurt, lemon juice, salt and pepper. Serve this with baguette. YUM YUM...

i like to cook black bean soup, with pieces of pork. Season it near the end and have rice to pour it onto...pick your favorite spices, I like the cuban ones. the rice can be white or brown. I add chopped onion, peppers(pick ur type), cilantro etc. It's a great comfort food for me and I change it just about everytime I make it!!
