all depends on what type of chicken you order. but all that moistness probably isn't in the marinade. it's all about the oven. a tandoori oven is what most authentic indian restaurants will cook their chicken in. they can reach temperatures of up to 700F. simply put, they cook the chicken so damn fast it doesn't have time to give up its juices.

YOGURT is the key to Indian marinades, also marinate overnight or longer. Tandoori, tikka.... all yogurt based.

the acid in the yogurt breaks down the muscle fibers, so you have very tender chicken, lamb...

you dont need a tandoor, you can have tender chicken on the grill or your own oven!

they marinate their chicken in MILK. try it on any kind of meat. it will surely keep your meats moist and soft
