Real Fettucine Alredo
1 pound fresh fettucine
8 Tbsp. butter
1 cup heavy cream
1 cup freshly grated Parmigginao-Reggiano cheese
Freshly ground black pepper, to taste
Freshly grated nutmeg
As the water for the pasta begins to boil, melt butter in large sauté pan over low heat. Add cream to butter and let it warm.
At the same time, salt the pasta water and cook until al dente. Drain pasta thoroughly, and mix with butter and cream in sauté pan over low heat. Add cheese and toss until sauce thickens slightly. Season with pepper and nutmeg.
Remove from heat and serve immediately with additional cheese on the side.

Go with Sugar Pies recipe......but add 1/4 to 1/3 cup grated Asiago cheese. Asiago cheese gives Alfredo sauce it's distinct superb flavor.

2 cups Whipping Cream
1 cup Parmesan Cheese, freshly grated
4 Tbsp Butter
Directions:
Over low heat, melt butter in a non-stick skillet. Stir in whipping cream and blend well. Add parmesan cheese and stir until sauce thickens. Do not boil. Thicken sauce with more cheese, or thin with more cream. The alfredo sauce should generally be creamy.

wow, I've never heard of sour cream or cream cheese in an alfredo sauce. I'll tell you my favorite recipe, it's so simple, but the flavors really pop. it's a simple enough sauce, so I'm not gonna list measurements, just ingredients.
Heavy Cream
Butter
Parmigiano Reggiano
Fresh Lemons
Tarragon
get your heavy cream reducing with a little bit of your butter, and at the same time start cooking your pasta. once your cream is reduced by about half, add your parm, then add the pasta. if sauce is too thin, add a little more cheese, if too thick, add a little more cream. finish with butter. squeeze lemon juice over top, and sprinkle fresh tarragon. damn good

Linguine Alfredo
This is a quick dish to prepare. It is an excellent vegetarian main course or side dish.
Ingredients:
1 1-lb package linguine or other pasta of choice
1 jar prepared alfredo sauce
1 small can mushrooms (use quantity to taste)
fresh or frozen brocolli flowerets
Procedure:
Prepare linguine according to package directions. Save time by adding the brocolli flowerets to the linguine as it boils. Drain.
Toss linguine and brocolli with the alfredo sauce and mushrooms. I usually add the sauce directly from the jar, then heat individual portions of the pasta dish in the microwave. You can also reheat in a casserole dish in the oven at 350 degrees for about 30 minutes.

To make a good Alfredo sauce you need three ingredient and spices to your taste
1. 2oz. of Good unsalted butter
2. 1Qt. Heavy cream (most restaurant use 40% heavy whipping cream)
3.1 cup Good grated Parmiggiano cheese or Grated Romano cheese
my favor is 1/3 Grated Romano(salty) and 2/3 grated Parmiggiano Reggiano cheese(Mild) please do not use a powder Parmesan cheese
4. A pinch of Salt & Pepper to a taste
5. A pinch of nutmeg if desider or even a pinch of cayeene pepper if you like spicy (optional)
How to put all togheter a basic alfredo sauce
1.Melt the butter in a sauce pan
2. Add the heavy cream to the butter
3. Let the mixture reduce at medium heat for 3 to 5 minutes or till the mixture will start to dense
4. Add the spices and cheese and stir
5. Add favore pasta ( Fettucini, and tortellini, mostly used in a Italian restaurant), one of my favore is gnocchi, which is a potato dumplink.
From this basic recipe you can creat many other sauces by adding about 4oz.of new ingridient, as pesto cream sauce, gorgonzola (italian blue cheese)sauce, creamy tomato sauce, four cheese sauce and more. If you want to make more elaboreted then add sauteed vegetables or seafood or both.

Quick 'N' Tasty Alfredo Sauce:
1 (8 ounce) container sour cream (do not use non-fat)
parmesan cheese, grated
1 tablespoon butter
cracked pepper
crushed red pepper flakes (optional)
1. Melt butter in saucepan and add sour cream slowly, stirring constantly.
2. Shake in Parmesan cheese while stirring until sauce thickens.
3. Add cracked pepper to taste. Add optional crushed red pepper for a fiery twist. Pour over pasta & serve immediately.
4. This is enough sauce for two normal servings of pasta.
5. Recipe can be doubled, tripled, etc. depending on servings.

1 egg yolk
2 tablespoons grated Parmesan cheese
Melt butter or margarine in a saucepan over medium heat. Add heavy cream, stirring constantly. Stir in salt, nutmeg, grated Parmesan cheese, and grated Romano cheese. Stir constantly until melted, then mix in egg yolk. Simmer over medium low heat for 3 to 5 minutes. Garnish with additional grated Parmesan cheese, if desired.
