Is there any way to tell how hot a jalapeno pepper is when you are picking them out at the grocery store? I like hotter ones but it seems like I get milder ones more often than not. Is there a way to tell without actually trying it? Thanks!

The heat is measured in Scofield Units. The more units the hotter the pepper is. The Scofield Units are measured when the pepper is fully ripe. An under ripe pepper does not have as many Scofield Units as a ripe pepper. An under ripe Jalapeno will have 0 to 5,000 Scofield Units. So let your Jalapenos turn red before picking them to get the full amount of Scofield Units (5,000 SU). Or plant Serrano's, a cousin of the Jalapeno pepper that looks and taste the same, except it is 2 to 3 times hotter than a Jalapeno, so you can get 10,000 SU's while it is still green looking, and 15,000 SU's if you let it turn red.

2 things to watch out for:

1) Red colouring - If they start to turn from green to a redder shade, the oils have matured in them.

2) Believe it or not, the hotness is largely centered in the white skin on the inside. I know this from making salsa and using jalapenos and poblanos; the more of the inside white skin I leave, the hotter the salsa is. Also, roasting the peppers evenly around helps to get the oils going and happy.

If you like the hot ones always pick the peppers that have pointy ends. The ones with blunt ends are always milder.

Don't pick the freshest ones. Look for ones a little older (not moldy). They're like red onions, a little age and wow they become potent! Younger ones will be milder regardless of size.

I believe it is the seeds that make it hot. I tried various ways to leave some seeds or all seeds. The more seeds the hotter.

The smaller they are, the hotter. So go for petite ones.
