I always wondered that too, so I looked it up on Wikipedia, and here's what I found...

"Egg shell color is caused by pigment deposition during egg formation in the oviduct and can vary according to breed, from the more common white or brown to pink or speckled blue-green. Although there is no significant link between shell color and nutritional value, there is often a cultural preference for one color over another. For example, in most regions of the United States, eggs are generally white; while in the northeast of that country and in the United Kingdom, eggs are generally light-brown. In Brazil, white eggs are generally disregarded as industrial, and red or light blue eggs are preferred. Regarding chicken eggs, the color of the egg depends on the color of the bird. According to the Egg Nutrition Center, hens with white feathers and earlobes will lay white eggs, and chickens with red feathers and earlobes will lay brown eggs."

The difference is not in the eggs. Chicken farms still use the candling process to determine if the eggs are fertile or not. The candling light shines through the white egg shells much better than the brown shells. There are other methods of candling eggs to check for embryos but the traditional method is still the most popular. Eggs which cannot be candled like brown, spotted or mottled eggs are used to make cake mixes and other bakery goods. Egg farmers sell all the white shelled eggs to large food distributers and sell the rest locally.

The only difference I know is that brown eggs have brighter, darker yolks. It use to be you could only get brown eggs from local farmers. Now they are available along side of the regular ones. My mom made a chiffon cake with brown eggs and it always gave it a really pretty color because of the darker yolks. Also some people think brown eggs have a more true egg flavor not watery like the mass pro-ducted white ones..

certainly, while you're questioning of organic white eggs, I even have some in my refrigerator on the 2nd that have been laid via ducks. They flavor a sprint stronger than hens' eggs and are very nourishing. In spring i'm getting GOOSE eggs that are additionally white . they're extensive and scrumptious. The birds are loose variety and the eggs are absolute to be fit than those of cooped up hens. in any different case hens eggs have precisely the comparable degree of nourishment whether or no longer they're brown or white. I comprehend that interior the U. S. they favour white eggs although that's in basic terms a rely of coloration decision.

The different eggs are for different purposes. Browm eggs are for eating. White eggs are for Easter egg coloring. You just can't get the right color on a brown egg so the chickens get together each year and lay White eggs to get the right colors on your Easter eggs dah!

P.S. you can eat the white eggs too but if it is too long after Easter I would just get the brown ones!

they're the same thing. i think the diet might affect the shell color or the breed or something.

edit: the increased cost at your local market may be due to the fact that the brown are from a local source. but i've read in many different places that there is no taste difference here in the u.s.
