Hermes' symbols were the rooster and the tortoise, and he can be recognized by his purse or pouch, winged sandals, winged cap, and the herald's staff, the kerykeion (It was originally a herald's staff, sometimes with wings, with two white ribbons attached. The ribbons eventually evolved into snakes).

Besides having a winged cap and sandles, Hermes is most known for his caduceus, the winged staff with two snakes twirling around it, symbolizing commerce. It is used today as a symbol in the medical field as well (as the roman counter-part Mercury used it to heal).
