French Fries are a snap, Take the ol' potato, peel it, cut it into strips the size of the finished fry you want.
Get a dep fryer and put the potato's in don't cook them all at once several batches in a small fryer.
They are done when they start to float and are golden brown
Onion rings are tricky. This will take some recipe searching to find the best O-Ring batter for you.
Cut the onion (LARGE) in the directio so that you produce rings. Before battering it is very important to pull of the thin film on the inside of the ring. This helps the onion stay put and not pull out of the batter when done. You batter the ring in your fav batter and fry till goldn brown
Here's on to get you started
ONION RING BEER BATTER
1/2 cup dark beer
1/2 cup seltzer water or club soda
1 tablespoon oil
1 egg white
1/2 teaspoon cayenne pepper
1 teaspoon kosher or sea salt
1 cup Wondra or pastry flour
1/4 teaspoon mustard powder
1/2 teaspoon onion powder
Pour beer and seltzer water or soda into the bowl of a blender or food processor (or a stick blender can be used). Sprinkle in pepper, mustard, salt and onion powder and oil. Pulse until combined. Add flour last, and process only until mixed. Batter may still be slightly lumpy, but almost smooth. If too pasty, add a teaspoon of water at a time until mixture has the consistency of a pancake batter.
Whisk egg white until frothy in a shallow bowl. Gently stir in contents of food processor, mixing until combined.
Slice large sweet onions into rings. Separate rings. Soak in a small amount of milk for 10 minutes. Drain and lightly sprinkle with onion powder, then dip in batter.
Fry small batches in hot oil (365F), turning once, gently to brown evenly. Remove using a slotted spoon and drain on paper towels before serving. Season with salt and pepper (a little hot salt or cayenne, if desired) while still hot from fryer.
Serve in paper baskets lined with paper towels. Great with batter-fried fish

Buttermilk Onion Rings Recipe
Ready in: < 30 minutes
Ingredients:
2 large onions
1 cup all purpose flour
2 cups buttermilk
1 tablespoon sugar
1 teaspoon baking powder
1/2 teaspoon salt
peanut oil
Directions:
Cut onions into 1/2" slices, and separate into rings. Dip onion rings in batter, coating well. Set aside.
Whisk together flour thru salt until smooth. Pour oil to a depth of 2" into a Dutch oven. Heat to 375º F. Fry a few rings at a time until golden. Drain on paper towels. Serve immediately.

It might be easier to cut your potatoes into round slices and make pub chips.
Onion rings....easy
the flater the onion the sweeter
peel off dry skin
cut into slices about 1/2 " thick
ddip in beaten egg and milk
then dip in flour
fry till golden brown
add salt

16 ounces frozen crinkle cut French-fried potatoes
1. Preheat oven to 450 degrees.
2. Combine cheese, paprika, 1/2 teaspoon salt and 1/4 teaspoon black pepper, or to taste.
3. Place potatoes in a medium bowl coated with cooking spray.
4. Sprinkle potatoes with cheese mixture, tossing well.
5. Arrange potatoes in a single layer on a baking sheet coated with cooking spray.
6. Bake at 450 degrees for 13 minutes or until tender.

if you have a fryer all you do is cut up a potato like fries and fry them, onion rings I think you slice onions and bread them and stick them in the fryer. good luck.
