Peanut Butter Pie
8 oz. softened cream cheese
2/3 c. peanut butter
1 c. sifted powdered sugar
2 tbsp. milk
4 oz. thawed whipped topping
Make or buy a graham cracker or chocolate crumb pie crust (9 inches). Beat cream cheese and peanut butter until smooth. Add sifted powdered sugar, milk, and beat until well mixed. Fold in topping and spoon in pie shell. Chill in freezer 15 minutes.

This is an Indian dessert called Malai Kulfi (kulfi is like ice-cream) Ingredients 1 can condensed milk 1 can evaporated milk 1 pt (16 oz) table creme 1 tsp. almond 1tsp.pistachio 1 tbsp cashewnuts 2 tbsp raisins 1/2 tsp. cardamom powder 1/8 tsp. saffron 1 can mango puree or 1 bottle of rose syrup Method:: 1. Mix all the ingredients (except saffron) in a blender for 2 minutes. 2. Soak saffron in 1 tsp milk for 5 minutes and then add to the mixture 2. Pour the mixture in to a tray. 3. Freeze it for 6 to 8 hour. 4. Scoop the frozen kulfi from the tray and serve with either ripe mango puree or rose syrup (both can be got in an Indian grocery store or persian grocery store).

All time favorite is called the Walnut Ball !
1 scoop of vanilla ice cream, rolled in chopped walnuts.
Put in freezer, and when ready for dessert, take out of freezer, put on a plate and top with hot fudge sauce and whipped cream and a cherry.
Just thinking about it makes me hungry!!

This is my favorite dessert to impress thats way too easy. Almost embarassingly so.
Ingred:
Lg Cont Vanilla Yogurt (24oz)
approx 1/4 cup OJ
1/4 cup HONEY
1 bag frozen berries of your choice
Pull berries out of freezer when you start so they will be nearly thawed by the time you're done mixing. (not very long) Blend all ingredients but the berries. Pour mixture into serving bowls. Pile berries on top. Looks amazing...juices from frozen berries runs down into yogurt mixture. Tastes great!!

Sugar Cookie Cutouts
1 pkg. (8 oz.) PHILADELPHIA Cream Cheese, softened
3/4 cup (1-1/2 sticks) butter, softened
1 cup sugar
2 tsp. vanilla
2-1/4 cups flour
1/2 tsp. baking soda
4 rolls ring-shaped hard candies (44 candies), crushed
PREHEAT oven to 350°F. Beat cream cheese, butter, sugar and vanilla in large bowl with electric mixer on medium speed until well blended. Add flour and baking soda; mix well. Cover. Refrigerate 30 min.
ROLL dough to 1/8-inch thickness on lightly floured surface. Cut into assorted shapes, using 3-inch cookie cutters. Place on greased baking sheets.
BAKE 10 to 12 min. or until edges begin to brown. Transfer to wire racks; immediately press about 1/2 tsp. of the crushed candies into top of each hot cookie. Cool completely.
--they're good, soft, and quick. I'm not a very good baker but mine turned out fine. I baked for about 5-7 minutes though and I didn't add the crushed candies.

CHOCOLATE CHIP MONSTER COOKIES
INGREDIENTS:
1/3 cup shortening
1/3 cup butter
1/2 cup granulated sugar
1/2 cup brown sugar
1 egg
1 teaspoon vanilla
1 1/2 cups all purpose flour
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup chopped walnuts
6 oz semi sweet chocolate chips
1 cup M & M plain candies (regular
or mini)
1 cup rolled oats
1/2 cup shredded coconut
1 cup raisins or dates
DIRECTIONS:
Preheat oven to 375 degrees. Mix shortening, butter, sugars, egg, and vanilla. Add dry ingredients. Mix in chocolate chips, raisins or dates, M & M's, and coconut.
Roll batter in waxed paper forming long "logs" approximately 2 1/2" in diameter. You can chill the log slightly if not firm. Cut cookies from log in 1-1 1/2" slices.
Place slices on cookie sheet sprayed lightly with cooking spray.
Bake 8-10 minutes or until golden brown, cooling slightly before removing from cookie sheet.
Yum Yum , make enought for your friends & family , or they won't leave any for you

Apple Dessert:
10 min 5 min prep
1 servings
2 pieces melba toast
1/2 apple (I use fugi apples,use your favorite)
1 packet sugar substitute
1 1/2 tablespoons milk (whole,half,or skim)
1/2 teaspoon cinnamon, if used only use 1/2 packet of sugar substitute (optional)
1 scoop sugar-free vanilla ice cream (optional)
1. Preheat oven to 325 degrees.
2. Start out with a oven safe bowl or dish.
3. Layer ingrediants as follows: melba toast, apple, sugar substitute, cinnamon (optional).
4. Sprinkle Milk evenly over dish.
5. Place in oven for approx.
6. 4 to 5 minutes.
7. Take out of oven and serve!
8. Add a scoop of sugar free vanilla ice cream for a special treat!

Snowball Cake
3 envelopes Lucky Whip (2 for inside cake, one for top) (or 6 cups cool whip)
1 (20oz) can crushed pineapple
Juice of one lemon
1 cup sugar
1 cup boiling water
1 large angel food cake
2 TBSP. unflavored gelatin
4 TBSP. cold water
1 bag shredded coconut (optional)
maraschino cherries (optional)
Soften gelatin in cold water. Add boiling water and stir until dissolved. Add sugar, lemon juice and pineapple including juice. Chill until partially firm.
Whip 2 of the envelopes of Lucky Whip (or use 4 cups cool whip) according to the directions on the package. Fold into gelatin mixture.
Line a 13” X 9” X 2” cake pan with wax paper. Cut or break cake into small pieces. Place alternate layers of cake and gelatin mixture in pan until all is used. Chill overnight.
Next morning, prepare the last envelope of Lucky Whip (or use 2 cups cool whip) and spread over the top of cake. Sprinkle with coconut and garnish with marashino cherries. Refrigerate until served..
***Option- you can also divide the coconut in half and color half of it green and half of it red for Christmas and sprinkle it on the cake that way. With the red and/or green marachino cherries garnish or with sugar silver balls (sprinkles)
***Note- 1 med fresh coconut yields enough coconut for 2 cakes.
Elyon Kosher unflavored gelatin 2 box/2cakes
Rich’s frozen non diary whipped topping 32 oz (add one tsp vanilla per cup of topping) yields 1 can for insides of 2 cakes (ie 32oz= 4 cups=> 8 cups whipped + 2 ½ TBSP vanilla (ie. 2 TBSP and 1 ½ tsp. vanilla)
Large Cool Whip 16 oz is enough for one cake .
