for a salsa jalapeno you need tomatoes, Jalapenos, dried chillies, onions, cilantro, a little lime juice, and salt. Toast all the ingredients except cilantro, salt and lime juice in a pan until charred. put all ingredients in a blender. blend and season with salt to taste. you can omit the dry chillies if you can;t find them but they really add a great smokey flavor. If you have access to a mexican supermarket they can help you pick the right chilies. Also get a molcajete if you can they flavor is different if use this instead of a blender.

Tomatoes, onions, garlic, and cilantro (gotta have that!!!) are your main salsa ingredients. For guacamole, you'll need avocados and dried spices- onion, garlic, maybe some chili powder. I cheat and use canned diced tomatoes but fresh onions etc. in my salsa. I even put celery in it, and it's good! You could add some pizzazz with a bit of jalapeno peppers, too.
