make a cheese pimiento sandwich
1/2 pound sharp cheddar cheese, grated (about 3 cups loosely packed)
1/2 cup homemade blender mayonnaise, recipe follows
1/4 cup (1 small jar) sliced pimientos with their juice or 1/4 cup chopped roasted red bell peppers
1/2 small onion, grated (about 1 tablespoon)
Cayenne pepper
Mix together all the ingredients except for the cayenne. Season to taste with cayenne.
*Pimiento cheese is a staple of picnics and lunches throughout the South. It is spread on sandwiches, used as dip, and stuffed into celery ribs.

Blender Mayonnaise:
1/2 teaspoon dry mustard or 1 teaspoon prepared
1/4 teaspoon salt
1 large egg
1 cup peanut oil
1 tablespoon fresh lemon juice
Put mustard, salt and egg in a blender and blend for about 20 seconds. Add the oil very slowly, in droplets, and blend until all of the oil has been bound with the egg mixture and the mayonnaise is thick and creamy. Add the lemon juice and blend briefly to incorporate.

Spicy Chicken Sandwich:
1¼ hours 15 min prep
4 servings
cooking spray
1/3 cup red hot sauce
4 (4 ounce) boneless skinless chicken breasts
2/3 cup water
1/2 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon paprika
1/2 teaspoon garlic powder
8 teaspoons fat-free mayonnaise
1 tomato, sliced
1 cup all-purpose flour
5 teaspoons cayenne pepper
1 teaspoon onion powder
4 reduced-fat hamburger buns with sesame seeds
1 1/2 cups chopped lettuce
1. Preheat oven to 350 degreesspray baking pan with cooking sprayMix pepper sauce and water in a recloseable plastic bag.
2. Mix all dry ingredients in a large recloseable plastic bag.
3. Put chicken in bag with hot pepper sauce and toss to coat.
4. Take chicken one piece at a time and shake in the bag of dry mixture, making sure to coat well.
5. Place the chicken on the baking pan and coat with the cooking spray.
6. Bake in a 350 degree oven for 30 minutes.
7. Sprinkle chicken with hot pepper sauce mix and spray more cooking spray on the chicken.
8. Turn and bake 30 minutes more.
9. Brown the face of the buns.
10. On the top half of the bun spread 2 teaspoons of the mayonnaise and top with a slice of tomato and chopped lettuce.

Pulled Pork Sandwiches
place a pork loin (boneless) in crock pot and cook on low until done
before cooking, season with
1/2 cup coffee
1/2 cup zesty italian dressing
1/4 tsp white pepper
1/4 tsp black pepper
1/2 tsp salt
1/2 tsp garlic powder
1/2 tsp onion powder
1 whole onion, cut up
Allow to cook, covered for at least 8 hours, until it falls apart when touched with fork. Drain and shred meat, then add your favorite bbq sauce (or eat with out bbq sauce) and serve on hamburger buns.

If i use sandwich meat i like to start off with spcy mustard honey turkey, pepperoni, salami, ham lettuce tomato onion bellpepper and when all done with meat and veggies i throw some zesty italian or someother spicy salad dressing on it.

SPICY STEAK SANDWICHES
1 lb. thin sliced steak
1 tbsp. Worcestershire sauce
2 lg. yellow onions
1/2 tsp. salt
1/2 tsp. pepper
1 tbsp. relish
1 tsp. oregano
2 tbsp. olive oil
1 green pepper
1 red pepper
Chop onions, green pepper and red pepper. Fry the steak in hot olive oil. Add Worcestershire, salt and pepper. Mix in a small bowl the onion, peppers, relish, and oregano. Add to steak and cook until tender. Serve on browned bread.
