ONION RINGS OR PEPPER RINGS
1 egg
1/2 c. milk
3/4 c. flour
1 tsp. salt
Onions, sliced into rings
Peppers, sliced into rings
Mix together egg and milk well. Set aside. Blend together flour and salt. Dip onion and pepper rings in batter, then flour mixture. Deep fry until golden brown.

Old Fashioned Onion Rings
This is an actual recipe from a former employee of a popular drive-in restaurant. Crispy coated onion rings like the pro's make.
1 large onion, cut into 1/4 inch slices
1 1/4 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon salt
1 egg 1 cup milk, or as needed
3/4 cup dry bread crumbs
seasoned salt to taste
1 quart oil for frying, or as needed
Heat the oil in a deep-fryer to 365 degrees F.
Separate the onion slices into rings, and set aside. In a small bowl, stir together the flour, baking powder and salt.
Dip the onion slices into the flour mixture until they are all coated; set aside. Whisk the egg and milk into the flour mixture using a fork. Dip the floured rings into the batter to coat, then place on a wire rack to drain until the batter stops dripping. The wire rack may be placed over a sheet of aluminum foil for easier clean up. Spread the bread crumbs out on a plate or shallow dish. Place rings one at a time into the crumbs, and scoop the crumbs up over the ring to coat. Give it a hard tap as you remove it from the crumbs. The coating should cling very well. Repeat with remaining rings.
Deep fry the rings a few at a time for 2 to 3 minutes, or until golden brown. Remove to paper towels to drain. Season with seasoning salt, and serve.

FRENCH FRIED ONION RINGS
3 large Spanish onions
vegetable oil
1/2 cup milk
1 egg
3/4 cup all-purpose flour
1/2 teaspoon salt
Peel onions under running cold water. Cut into 1/4 inch slices and separate into rings. Heat oil (1 inch) in 3-quart saucepan to 375 F.
Beat remaining ingredients with hand beater until smooth. Dip each ring into batter, letting excess drip into bowl.
Fry a few onion rings at a time in hot oil, turning once, until golden brown, about 2 minutes; drain.
Serving Size: 4

Oven Baked Onion Rings:
50 min 20 min prep
4 servings
1/4 cup plain breadcrumbs
1/2 teaspoon dried oregano
1/4 teaspoon cayenne pepper
2 medium onions, cut cross ways into 3/16" rings
2 tablespoons 1% low-fat milk
1/2 teaspoon salt
pepper
1. Preheat oven to 350 degrees.
2. Spray a cookie sheet with Lite Olive Oil or other veggie oil.
3. Mix bread crumbs, oregano& cayenne (Mix these ingredients on a sheet of wax paper it will make the next step easier).
4. Dip onion rings into the milk and allow the excess to drip back into the bowl.
5. Dip into the crumb mixture.
6. Coat well and pat so the crumbs stick.
7. Place onion rings in a single layer on the cookie sheet.
8. Bake onion rings until the crumbs are golden and the onions are soft (Approximately 30 minutes).
9. Sprinkle with salt& pepper& serve.
