Country Milk Gravy
This is my mother's Texas recipe I grew up with. It is very tasty and is great with biscuits and sausage or with country fried steak..
1/2 cup vegetable oil
3/4 cup all-purpose flour
1 teaspoon salt 1 teaspoon ground black pepper
4 cups milk
Heat the oil in a large skillet over medium heat. Wisk in the flour, salt and pepper until smooth. Cook and stir over medium heat until browned, about 10 minutes. Gradually stir in milk so that no lumps form, and continue cooking and stirring until thickened. If the gravy becomes too thick, you may thin it with a little more milk.

You take the pan drippings from frying meat (or just oil if you didn't fry meat) and heat it to a good sizzle. Then take flour (seasoned however you like it--you can go as simple as salt and pepper) and sprinkle about a half of a cup to 1 cup in the hot grease. Start stirring it quickly with your spatula and keep it sizzling until the flour browns and makes a thin slightly pasty mix, then start adding either milk or water a little at a time and stirring constantly. Keep doing this until you get the amount of gravy at the consistency that you want. It will take a little bit of practice, but you will get it down pretty quickly. Easy and tastes better than a mix. Yummy!

First of all, brown your meat in a cast iron skillet. Remove meat when done, saving the drippings. Over medium heat, sprinkle in flour a little at a time, stirring all the time til a golden roux is made. Lower heat a little & add milk a splash at a time, continuing to stir til thickened......We serve it for just about anything here in Georgia......

You use a milk and flour paste put it in the drippings and pan scrapings from the meat, usually pork or ham.It will also need some liquid. Do take off the grease as well as you can first.

...add some sliced boiled eggs and put on home made biscuits and it is even better.
