I am opening a bar and obviously the goal is to make profit while keeping a steady supply of happy customers coming through the door. I've been a bar tender and manager in the past and I still can't decide what I should establish as my policy on comps. I know a little "this one's on the house" every now and then makes customers tip better and visit more frequently, and I don't want to be too strict on the policy or too lenient.

What comp policies have you worked with and how well did you think they worked?

Make it very clear that no drink goes over the bar unaccounted for. IF you are an understanding bar owner, you can allow them to give away one here and there provided they log each and every one. If you have a POS you can have them start a comp tab for those transactions. You have just shown your bar staff that you are reasonable and a very nice guy. Now it is time to give them the flip side to the coin. Tell them they must keep it reasonable. It must be in the best interest of the bar. They also must put it on a comp tab so that it can be tracked. If they give away a drink otherwise, then they are stealing, and will be terminated.

My policy was only for screw-ups. Like the food didn't come out soon enough or took too long, I'd comp drinks to keep them happy. I'd comp a beer or two to family members. But NOT all the time. I know liquor sales are gold, but you have to watch your bottom line.

It's one thing to say I owe you a beer, and another for them to come in constantly expecting it.

Just remember that being the owner now you are going to have enough of your employees "comping" for their friends, family, or people they are flirting with at the bar. One bar I worked for had a "spill list" they allowed up to $25.00 in liquor comps for regulars, friends etc. it also helped keep the help somewhat honest because they were allowed to do it once in a while

Just have a casual saying on the wall stateing that regulars may get free beer. or have every 5th or 10th drink be free
