Eat the crimson ones and then wait for the others to turn crimson, too. They should be a pinky-white colour inside.

The darker red the better. Our department gets fruit boxes every morning and they usually have a few lychees at the bottom. Their colours range from dark red to pale red/greenish. The darker ones are always much sweeter.

Dark red ones show that they are perfectly ripe. Make sure though that the skin has not gone too dry, it will look kind of crunchy, if it is then you'll know its been on the shelf for too long and may taste different. The yellowy ones can indicate that they are ripe enough. I would suggest you eat the brown first. that is if you are adventurous enough lol

eat the dark red ones first....they shud be ripe...light red is ok...wait for the yellowy green to ripen a little i guess...but iono...ive eaten them before (of course) and most of the time the light red with only a little green on the outside is ripe enough to eat...the only thing to look out for is whether or not its fresh...if u squeeze a lychee a little and its firm that means its good..u wouldnt want to eat a lychee thats too ripe (or squishy) cuz it doesnt taste as good and chances are its not as fresh..but iono..u can always try each one and find out if it tastes sweet...
