Yes, using 2 eggs in this recipe which calls for 3 eggs will be fine. I have baked with less eggs than what was listed on recipe. For example, I have put 2 eggs into a recipe that called for 4 eggs and it tasted just fine. Good luck and happy baking!

What size eggs do you have? Most recipes in the "Old" cookbooks also gave "volumes". For example 2 whole eggs (1/3 cup in volume). So, since you want to make a white cake, and they are wanting 3 whites (right?), if you're willing to give up the White part of the cake, use both whole eggs (you now have a yellow cake), and you should be ok. If you have small eggs, maybe you should go to the neighbors and borrow an egg. If you have medium.........you MIGHT get away with it, but go borrow. Large, X-large and jumbo eggs, yeah, you'll be ok with just two.

I made a cake last week and only had two eggs. I just added about an 1/8th of a cup of water and it turned out wonderful. The cake was gone in 1/2 an hour, and no one noticed a thing.

You could borrow an egg from a neighbor, keep a pkg. of frozen egg whites in the freezer, or go vegan completely and start using egg replacement bought at health food stores. For today's cake I suggest adding 1/2 tsp. of cornstarch to 3 T. water - beat it together in a cup and add as the third egg substitute!

i have baked a cake with just 2 instead of 3 eggs before in a cake mix recipe and the cake was just as good so just make it without the third egg !!!!!! hey and save me a piece of cake especially if it is german chocolate !!!

if you are worried you can use a tablespoon of applesauce to the eggs, but I think that 2 eggs will be just fine. Don't worry, trust me, I've had to make these kinds of adjustmnets all the time and as long as it isnt a drastic change, it'll come out great just the same.

Buy a chicken. You could try a small amount of mayonaise. It has some egg in it and has some binding capabilities. You could increase your other fluids a small amount and use only two eggs.
