I tried tuna steaks for first time recently. Made marinade with garlic, orange and lemon zest and their juice, lemon pepper. Very good; but dry. Any suggestions? Maybe a sauce for topping?

Sounds like you may have cooked it too long. When I do mine I have the steaks cut to 1/2 to 3/4 inch think and then I dry them and then rub them down with spice. Cook them in olive oil on a frying pan until they are just pink inside, usually when the side turns white you flip it. Maybe 3-4 minutes on each side. awesome

Use Montreal steak seasoning on them,sear them on both sides in a pan,with butter,not oil...then slow cook them till amost done.
Tastes almost like a steak

I had a friend of mine smoke some tuna in a smoker, it was awesome!!!!!!!!!!!!!!!
