There are all kinds of recipes for this drink out there. Just Google the 'Pina Colada' term and you'll see what I mean.
This is a specific 'Pina Colada' recipe that we've used before though and really like. And we really believe that adding the vanilla ice-cream is key....
-3 oz Captain Morgan spiced rum
-3 tbsp coconut cream
-3 tbsp crushed pineapples (pineapple juice)
-A bit of vanilla ice-cream
Put all ingredients into an electric blender with 2 cups of crushed ice. Blend at a high speed for a short length of time. Strain into a glass and serve with a straw.

Pina Colada:
5 min 5 min prep
2 servings
4 ounces cream of coconut
4 ounces pineapple juice
1 1/2 ounces rum (Bacardi Gold)
1 1/2 ounces coconut rum (Malibu)
2 cups crushed ice
1. Mix ingredients in blender until smooth; pour into glasses; garnish with pineapple wedges and maraschino cherries if desired.

Pineapple juice, coconut milk, rum. If you really want to impress her, use fresh coconut milk. The original calls for a 1:1:1 ratio, but if you don't want it too strong, use less rum (or more pineapple and coconut). You can also mix it with ice and blend it for a frozen pina colada.
