Most restaurants steam their broccoli in a large steamer rather than boiling it. That would definately make a difference in taste and texture.

Are you talking about the 'Chinese' dish often called 'broccoli beef?' If you are, then you need to get a 'nice piece of beef' and cut it into 'slices' between 1/8-1/4 of an inch thick. Cook it 'rapidly' in a HOT 'fry pan' in some light oil. Remove the meat and let the oil cool down just a bit, then put in 'pieces of broccoli' ... you may use any RAW broccoli that you have broken or cut into 'slightly larger than bite sized pieces. Cook the broccoli in the same pan and oil that you cooked the meat, but leave it in the pan. Add some good 'sauce' ... most restaurants use either 'oyster sauce' or 'black bean sauce' but some use 'garlic sauce' so you should 'taste' each of these and decide how you want your 'finished dish' to taste. You may now add any other 'vegetables' (mostly for a bit of 'color' like red and green peppers, onions, and strips of carrot. Cook that until they start to get 'soft' then stir the beef in for a last 'heating' and serve it immediately, either 'plain' or with 'rice' ... I use only Jasmine or basmati rice, but the Chinese actually use the 'short grained sticky rice' ... so again, it's up to you to decide how you want your dish to 'look' and to 'taste.'

Don't overcook it. Add it to the beef at the last minute and stir fry it.
