I like to blend it all up and make a dairy free fruit smoothie.
I usually put at least 5 fruits in it and whizz it all together which makes it so easy to eat my 5 portions of fruit per day. I've also experimented and added veg to the fruit also. Apple, orange, beetroot (fresh obviously!) and ginger is gorgeous!

Warming Winter Stew

Ingredients

1 large potato
1 carrot
1 large onion
1 leek
1 tin chick peas or black eyes beans
vegetable stock cubes
marmite
vegetarian worcestershire sauce
tomato paste or sauce
I parsnip
2 sticks celery
1 sweet potato
peas


This stew can easily be made from any left over vegetables but it important to have potato, carrot and onion to give some sweetness to the gravy. Chop all of the vegetables to the same size pieces and put in a large saucepan.

Cover with boiling water and add 2 stock cubes, a spoonful of marmite, a teaspoon of vegetarian Worcestershire sauce and a squirt of sun-dried tomato paste or ketchup. Bring to the boil and simmer for 20 minutes. Then taste the gravy and season to taste.

Serve in warmed bowls with chunks of warm crusty bread buttered with vegan margarine.

Extra fruit even if not 100% fresh will make a good crumble.It is also good to add to packet jellies to liven the jelly up and of course there are smoothies . Extra veg can be stir fried,made into purees,popped into stews, and if you can face them smoothies.

Fry the leftover Veg in a little margarine.

When piping hot pour in some beaten eggs

Wait until the egg mixture has almost solidified then sprinkle with grated cheese (optional) and put under hot grill til golden brown.

Serve with baked beans or bread and butter or anything else that takes your fancy!!

Any veg and any fruit,cube it or chop it, heat it in olive oil add chopped cooked bacon,crisp it all up and add glass of red wine. Simmer 3 mins & present on a plate spooning some of the reduced juices/wine over the mixture and then crumble small amount of stilton on top. serve with fresh parsley garnish and crusty bread.

Make a curry or lasagne. Put them in a risotto/stirfry/spagetti bolagnese. Pasta goes with anything.
Bubble and squeak is yummy.
I like cheesecakes or trifles with fruit on top.
I also like vegtable pie made with a thin bechamel sauce with one tablespoon of dijon mustard and two tablespoons of honey. For the pastry use 175g of flour to 75g of butter. Rub together and then mix with a little water to form a ball.

Fruit cocktail, in green jello, its called under the sea recipe, Simply make green jello like on package, put in the fruit , and then put more jello on top, put in refrig so the jello will set and you can see the fruit inside the jello, When the jello is all set, Add cool whip on top before serving

Smoothies or Milk shakes for the fruit ( not that you should ever have left over fruit!), stir fry or veggie omlette for the veg!
