The difference between jam, jelly, and preserves are the amount of time it takes to make them. Preserves are the easiest, followed by jam, and then jelly.

I would say that jam is made using whole fruit which are left in the finished product (although they may have mushed down a lot); jelly is strained through muslin or a sieve so it's clear; and technically both are preserves but preserves can also include things like, say, fruit preserved in alcohol, or pickles, stuff like that.
