Like if the family had 3 kids and there are only 2 beds and no couches.

If they're small children, all three may share the same bed. Otherwise, someone probably sleeps on the floor. Also, some hotels offer cots or rollaway beds, which can be used for additional family members.

The friendly desk staff generally see to it that every one has a bed.
They will get more if required, or supply a second room at reduced rates.

you get a bigger room or 2 kids sllep in one bed and 1 kid sleeps with the mom & dad

Bring an air mattress, or sleeping bag for one of the children to use... that is what our family of 5 does....

when i worked in hotels we had cots that we would put in rooms with larger familes, and they have playpens for infants.
