The tenderloin is a narrow muscle that runs along the bottom edge of the loin, starting approximately in the middle and extending back to the leg. It is a very tender, lean, and boneless cut. This cut comes in two pieces, and the quickest way to cook them is to separate them. They are yummy when roasted.
