Not knowing your grade... here are my suggestions....
-Compost bin...how to make, how to care for it and benifits of it.
-Vermiculture...(same as above)
-Select a local ecosystem to portray and discuss the relationship of all the creatures.
-Organic farming...what it involves and the pros and cons of it.
-Genetically Modified Organisms...development of it, the uncertainty of it and pros & cons.
-Green house gases explained in detail.
-Life-cycle of organism of your choice.
-Different ways to recycle...the regular cans, glass, plastic and paper to clothes recycling and reinventing uses for other objects.
-How consumerism & materialism are two huge factors in the problem of pollution.
-Discuss how different countries deal with their environment.
-Discuss the Kyoto-protocol...who's in it, what is the outline...
-Discuss the birth defects of wild animals due to poison in their environment...DDT comes to mind.
-Auto industry's affect on the environment...ANY industry would do...pharmacuetical, chemical, plastic, beauty, agriculture...etc.
Many of these you could write a good paper on and include some effective diagrams or photos to support your written work...3D items would work too. Do something current or with in your area...teachers like that for the most part.

I've been working on a process to replace landfills that will use all the trash now dumped in landfill all over the planet. By eliminating landfills in this manner several problems are resolved in one process. The raw material generated has huge value as feed stock for industry. And polution is reduced as well as the elimination of trash in unwanted places. It is a very good environmental project.
