"Once bitten, twice shy" means that you have been hurt by someone or something and it's made you skittish about putting yourself in a situation like that again.

With things like this, it should be one strike you're out - not necessarily like in the bible when a prophet was killed for making a false prophecy, but people like this should be given NO credibility ever again. To me, if people are claiming to be Christian and predicting judgement day, yet somehow missing that part in the bible where it says no one knows the day or time, they are obviously crazy or full of pride. Judging by how much money was pumped into promoting this, I am willing to bet he is just crazy. All the money for full page ads in the paper, signs, even RVs could have been used to feed impoverished people. I think that would have been a much more effective testimony of the Christian faith. Sorry for the rant, GUY. This stuff just makes me crazy(er). Great question.

It is actually "Once bitten, twice shy"....meaning that if you were bitten by a dog (for instance) you would be "shy" or hesitant to go near that same dog again.
It refers to anything you have had a bad experience with. You always think twice before making the same mistake, it implies.
Perhaps the person you met online has had a nasty experience before, and doesn't want to have another one.

Once bitten, twice shy just means if you fall in love with someone and that someone rejects you--"once bitten"--you may be very, very reluctant--"twice shy"--to let yourself fall in love again.
It's sometimes rendered "once burned, twice shy." Same meaning.
Bit it can stand for any experience, not just falling in love

Originally derived from animals in the wild. Once they are bitten by a larger animal, they are twice as afraid as if they had never been bitten.

It means if you have been hurt before by someone, you are much more cautious about getting into the same situation again.

It is similar to this saying:
"Fool me once, shame on you. Fool me twice, shame on me."
(Several of the other answers are very good, by the way.)

It basically means that once someone hurts you you're severely apprehensive about someone else hurting you.
