you’re just starting out with Indian cooking, the vast number of spices available in stores may actually end up confusing you. While Indian cooking does use a greater variety of ingredients than most other cuisines, there are some that are basic to most dishes. Start with these and buy in small quantities (spices lose their strength and aroma if kept for too long). Build your store and add the more exotic ingredients as you grow familiar with Indian cuisine.

No,not at all,Bengali people(in India,East region) don't use too much spice.U can try with Fish
500gr river fish,cut into 5 pieces,rub with some salt,after 3-4 minutes wash them well,Add turmeric pd.& salt.Put a nonstick frying pan,swich on,let it be hot,add some oil,then fry fish(not brown) keep them aside.In remainning oil add 1 bay leaf and then cumin seed,when colour changing,add 1\4 cup water,add 1tsp tarmeric pd,2ts cumin pd.,stir it,add 1\2 cup of fresh tomato pureestir it until well done.Add 1cup of water,when bubbling add fryied fish,Boil it 2-3minutes.Switch off.Finally u add green corriender(leaves).Serve them with cooked rice.

i dont know. you need many spices. but if you like to keep your food simple then you dont need many ingrediennts.
