I agree it's a great idea! I do not have any experience with laminated flooring, but did consider doing that myself. If I were going to do it, I would probably use construction adhesive to bond the laminate to the drywall, and then nail it to the joists.
I was fortunate to get to do the ceiling in standard 3/4" T&G at a reasonable price. Okay, I'll tell you. I got used T&G flooring at a used lumber yard, ran the boards thru my planner, stained, polyed them and then screwed them up. I used screws in the tongue so I would not damage my finish with hammer marks. Turned out beautiful.

And, I told my kids, "If any of you EVER PAINT my beautiful stain job after I die, I will HAUNT you for an eternety!"

You can get bead board, which was often used on front porch ceilings, and you can get that in a plywood, but be careful when you put both up and make sure you have them secured to the joist. I would use a 18 gauge nail gun with nails long enough to go through the boards, the sheet rock under them, and into the joist far enough to hold. The individual boards will be expensive and interlock on tongue and and grove and they would probably look better.

Sounds like a great idea! I would make sure you get the single planks though, not the laminate that has a multi-plank pattern on each section before assembly...
