Very cheap cuts of pork. They're more fatty and will fall apart better. I'd go with a pork butt or Boston butt.

My wife and I make pork shoulder or butt. They're usually the best for pulled pork to make carnitas or BBQ sandwiches.

I use a shoulder or butt roast. These have the fat marbled through them and give the best flavor.
