Granny Smith,Fugi or Gala are all great for this recipe.

For any kind of baking with apples, I prefer to use Granny Smith apples. Also, I have used Pink Lady apples and they are pretty good in baked goods as well, but the tried and true for the recipes I bake with apples have always been the Granny Smith. They are always tart and firm. Pink Ladys are not quite as tart, but have a bit more tartness than others. I almost cannot eat a Granny Smith plain, but I love the Pink Ladys because they are a bit sweeter and juicier than the Granny Smiths. Other apples are too sweet for me now. I hope this helps!

Its best to use granny smith apples or Golden Delicious when baking with apples..

Here is a really good recipe-
INGREDIENTS:
1 1/2 cups flour, sifted
1/2 cup sugar
2 teaspoons baking powder
1/2 teaspoon salt
1 1/2 teaspoons ground cinnamon
1/4 cup shortening
1 large egg, slightly beaten
1/2 cup milk
1 cup chopped tart apples
cored and grated
.
Topping:
1/4 cup brown sugar
1/4 cup chopped pecans
1/2 teaspoon ground cinnamon

PREPARATION:
Sift together flour, sugar, baking powder, salt and cinnamon into mixing bowl. Cut in shortening with pastry blender until fine crumbs form. Combine egg and milk. Add to dry ingredients all at once, stirring just enough to moisten.

Stir in apples. Spoon batter into paper-lined muffin cups, filling each about 2/3 full. Sprinkle with crunchy topping. Bake in 375° F. oven for 25 minutes or until golden brown.
Streusel Topping: In a small bowl, mix together brown sugar, chopped pecans and ground cinnamon.
Makes about 12 muffins

Granny Smith

I prefer pink lady apples they are firm, tart and a sweet also.

Baldwin apples have a sweetly tart flavour
Cortland are sweet tart and resist browning
Granny Smith are sweetly tart and moderately juicy
Lady apples are nice sweet tart as well
