FRUITY COMPOTE
INGREDIENTS:
1/2 cup sugar
1 1/2 cups water
1-inch piece fresh ginger, peeled and thinly
slivered
1 cup dried fruit mix
2 cups fresh or frozen cranberries
1 orange, peeled and sectioned
1 Granny Smith apple, peeled, cored and cut into
small, thin wedges.
DIRECTIONS:
In large saucepan, combine sugar, water and ginger.
Bring to a boil over high heat. Add dried fruit mix.
Bring back to a boil and immediately reduce heat to
low simmer. Cook, uncovered, until fruit is not quite
tender, about 5 minutes. Add cranberries and simmer,
stirring occasionally, until cranberries pop. Stir in
orange and apple. Remove from heat and allow to cool
down.
Serve warm or at room temperature.
Yield: 6 servings.
Fruit Cookies - No Sugar, Eggs Or Flour
Yield: 24 Servings
3 Med. sized ripe bananas
1/3 c Peanut or safflower oil
1 ts Vanilla
1/8 ts Salt
1 1/2 c Rolled oats
1/2 c Uncooked oat bran
1 1/2 c Coarsely chopped mixed dried fruits (such as dates, apricots and
raisins)
1/2 c Chopped nuts (walnuts, almonds or pecans)
Preheat oven to 350 degrees. Grease 2 large cookie sheets.
Mash bananas in large bowl until smooth. (You should have about 1-1/2 cups.)
Stir in oil, vanilla and salt.
Add oats, oat bran, mixed fruits and nuts; stir well to combine.
Drop by rounded measuring tablespoonfuls onto prepared cookie sheets, about 1
inch apart. Flatten out slightly with back of spoon.
Bake about 20-25 minutes or until bottom and edges of cookies are lightly
browned. Transfer cookies onto wire rack to cool completely. Store in
refrigerator.
Makes 2 dozen.
Spring Fruit Trifle
Prep time : 15 min
Ready in :45 min
Ingredients:
36 NILLA Wafers
2 Tbsp. orange-flavored liqueur or orange juice
3 cups seasonal fruit, such as sliced kiwi, blueberries
and/or sliced strawberries
2 pkg. (4-serving size each) JELL-O Vanilla Flavor
Instant Pudding & Pie Filling
3 cups milk
1 pkg. (6 squares) BAKER'S Premium White Baking
Chocolate, melted, cooled slightly
1 tub (8 oz.) COOL WHIP Whipped Topping, thawed, divided
Preparation:
Break wafers coarsely into 2-1/2-qt. clear glass serving
bowl.
Sprinkle with liqueur; top with layers of fruit.
Prepare pudding as directed on package, using only 3 cups
milk.
Refrigerate until pudding starts to thicken.
Add chocolate; stir with wire whisk until well blended.
Gently stir in half of the whipped
topping.
Spoon over fruit; top with remaining whipped topping.
Refrigerate at least 30 minutes or overnight.
Three Fruit Drink
* 1 cup yogurt flavor of your choice
* 1 banana peeled and chunked
* 1 peach washed -- pitted, and chunked
* 1/2 cup strawberry washed and hulled
* 1/2 cup milk or whole milk
* sweetening to taste (honey or brown sugar)
Place ingredients in blender or food processor and purée. If too thick add more milk. Serve well chilled or add 4 or 5 ice cubes before serving.
Tutti Fruity Kabob
* Orange segments
* 12 oz cheese
* Watermelon balls
* Pineapple
* Red cherries
* Black and white grapes
- Cut half the cheese into cubes approximately 1/2" square.
- Cut remaining cheese into triangles.
- Prepare a selection of fruit 8-10 pieces of fruit per kebab.
- To assemble the kebabs, thread pieces of cheese and fruit alternately onto skewers.

Kugel is a recipe that is often eaten sweet with fruit and is more complicated than fruit salad! Here are two different recipes. You can subsitute the fruits suggested with your own choices if you like.-
Sweet Pineapple Kugel
10 ounces wide egg noodles
6 eggs
4 ounces melted margarine or butter
1/2 cup sugar
1/2 cup milk
1/4 teaspoon salt
1 teaspoon baking powder
1 teaspoon vanilla
1 (20 ounce) can crushed pineapple
1/2 cup golden raisins
1/2 cup dried apricots
TOPPING
1 teaspoon cinnamon
1/2 cup cornflake crumbs
1/4 cup brown sugar
Cook noodles and drain.
Mix together next nine ingredients.
Add cooked noodles.
Pour into greased 9 x 13 inch pan.
Mix the topping ingredients together and sprinkle over kugel.
If desired, you may increase the amount of topping ingredients proportionately to make an even sweeter, crunchier top.
Bake at 350 degrees F for 1 hour.
*Sweet Fruit Kugel -
ingredients
8 cups crumbled stale bread or cake (about 10 slices)
4 tablespoons water
6 tablespoons sweet red wine
2 eggs, lightly beaten
2 apples, peeled, cored, and chopped
2 pears, peeled, cored, and chopped
6 plums or prunes, pitted and chopped
4 tablespoons raisins
1 lemon, rind grated and juice squeezed
1 teaspoon ground cinnamon
1 teaspoon ground allspice
1/2 teaspoon ground cloves
1/2 teaspoon salt
1/2 cup shortening
method
1. Preheat oven to 250°F.
2. Grease a 2-quart baking dish.
3. Sprinkle the bread or cake with the water and half the wine; mash lightly with a fork.
4. Combine the beaten eggs with the chopped fruit, lemon rind and juice, spices, and salt.
5. Pour fruit mixture over the softened bread or cake.
6. Melt 2 tablespoons of the fat and stir it into the mixture, then turn mixture into prepared baking dish and bake overnight in a very low oven—about 250°F—or place dish in a roasting pan half-filled with hot water and bake at least 4 hours.

~~~~~~~~ Festive Melon Bowl ~~~~~~~~
Use a small cookie cutter or a melon baler to cut the holes in the watermelon “bowl.”
½ small watermelon (7 pounds)
1 cantaloupe, cut into balls (4 cups)
½ honeydew melon (2 ½ pounds), cut into balls (3 cups)
2 cups seedless red or green grapes
2 cups fresh or canned pineapple cubes
3 tbsp sugar
2 cups plain low-fat yogurt
¼ cup reduced-fat sour cream
¼ cup honey
2 tsp lime juice
1 pinch of allspice
1.With a melon baller, cut the watermelon into balls, remove the seeds, and transfer to a large bowl (reserve the shell). Add the melon, grapes, and pineapple; sprinkle the fruit with 1 tbsp of the sugar. Chill the fruit and watermelon shell until serving time.
2.In a small bowl, combine the yogurt, sour cream, honey, remaining 2 tbsp sugar, the lime juice, and allspice. Chill until serving time.
3.Spoon as much of the fruit mixture as will fit in the watermelon “bowl,” reserving the rest for refills. Serve the yogurt sauce on the side. Serves 16.
~~~~~~~~ BERRY BOWL ~~~~~~~~
This is an extremely easy dessert that is also extremely impressive. All you need to do is boil water!
1 pkt cherry flavoured gelatin (or jelly crystals)
2 punnets blueberries
1 punnet raspberries
1 punnet strawberries (about 10 large ones, 15 small)
1 tub Greek-style yoghurt
4 tbsp honey
Icing sugar
1.Dissolve gelatin according to packet instructions. Pour into the bottom of a deep dish or trifle bowl. Add washed and dried blueberries from one punnet.
2.Chill gelatin in fridge until set.
3.Wash, hull and dry all the rest of the berries.
4.Fold in honey into the Greek-style yoghurt.
5.Pile yoghurt on top of the set jelly. Add berries.
6.Dust with icing sugar and serve well chilled.

Summer Dessert Pizza
INGREDIENTS
1/4 cup butter or margarine, softened
1/2 cup sugar
1 egg
1/4 teaspoon vanilla extract
1/4 teaspoon lemon extract
1 1/4 cups all-purpose flour
1/4 teaspoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
4 ounces cream cheese, softened
1/4 cup confectioners' sugar
1 cup whipped topping
1 firm bananas. sliced
1 cup sliced fresh strawberries
1 (8 ounce) can mandarin oranges, drained
2 kiwifruit, peeled and thinly sliced
1/3 cup fresh blueberries
GLAZE:
1/4 cup sugar
1/4 cup orange juice
1/4 cup water
2 teaspoons cornstarch
DIRECTIONS
In a mixing bowl, cream butter and sugar; beat in egg and extracts. Combine flour, baking powder, baking soda and salt; add to creamed mixture. Beat well. Cover and chill for 30 minutes. Press dough into a greased 12-in. x 14-in. pizza pan. Bake at 350 degrees F for 12-14 minutes or until light golden brown. Cool completely.
In a mixing bowl, beat cream cheese and confectioners' sugar until smooth. Add whipped topping; mix well. Spread over crust. Arrange fruit on top. Combine glaze ingredients in a saucepan; bring to a boil, stirring constantly. Boil for 2 minutes or until thickened. Cool to room temperature, about 30 minutes. Brush over fruit. Store in refrigerator.
