I like them Green and cut into 1/4-2/4 inch medallions dipped in egg then seasoned bread crumbs. Then fried in olive oil til golden and served with either ranch,bleu cheese, or horseradish sauce.

I love pizza!
Simple, Easy Pizza
A pizza that has very basic ingredients, but my family and friends love the taste.
20 servings 5 pizzas 1½ hours 30 min prep
3 cups luke-warm water
1 tablespoon yeast
1/4 cup sugar
1 tablespoon salt
8-10 cups flour
2 tablespoons cornmeal
3 (8 ounce) cans tomato sauce
6 cups shredded mozzarella cheese
Add water, yeast, sugar, and salt to mixing bowl.
Let sit 10 minutes. You should see bubbles of yeast (if not, you may have the wrong water temperature: start over).
Mix in flour conservatively - don't add too much. After mixing it in, keep adding until dough is not wet looking and can be kneaded.
Knead dough until smooth.
Let rise at least 30 minutes (ideally 1 hour) at room temperature.
Pre-heat oven to 475 degrees.
Split dough into pieces (3-5 depending on size of pizza).
Roll dough out each to the size of your pan (toss if desired to help reach appropriate size).
Sprinkle corn meal onto each pan.
Place dough onto pans, stretching or squeezing if necessary to fit properly.
Spread some tomato sauce onto dough, leaving about an inch around the outside without sauce.
Spread some cheese on top of the sauce.
Add additional toppings as desired.
Bake for 8-12 minutes, or until dough is fully cooked. The bottom of the pizza should be at least a little crispy.

try roasting them with other veg ( peppers, onions, mushrooms and courgettes) drizzle with olive oil and sprinkle with chilli flakes. Roast at gas mark 4 for about an hour. You'll love it. Usually serve mine with pan fried pork loin, cooked in olive oil and garlic. Have some crusty bread on hand to soak up the delicious juices.

Cut tomatoes in half, cut side dipped in seasoned flour and a sprinkle of thyme, then gently fried in a little butter and olive oil serve on toasted giabatta yummy

I love tomatoes, but unfortunately I am allergic to them unless they are cooked ( too much acid is what I've been told - can't drink OJ either) My favorite way is fresh from the garden, sliced and served on a home-grilled burger.....Now I only get yummy homemade sauces......Let me know if anyone knows of a low-acid variety of tomato......It would make my day!!

Sliced, layered with cucumber, mozzarella, sprinkled with, fresh ground pepper and a little salt, lemon/lime juice and olive oil and, just before serving add quarters of hard(semi) boiled eggs, some de-stoned black olives and garnish with basil.

fresh-can't stand boiled or fried-it makes them into another animal altogether.
Funny thing with tomatoes though-they're one of the few items where cooking is more beneficial through the release of their minerals and vitamins via the cooking process whereas its usually the raw/fresh option is the best.
Like your style -garlic and balsamic-gives them a great lift

I love tomato!!!
I love tomato sauces for pasta, fresh tomato on salas, tinned tomato on toast, but my absolute favourite, it something my daddy makes. Its called a Chilly Gunge (Chilly is his nickname, and its basically a mush!) He used to chop up fresh tomatos, put them in a frying pan with a tiny bit of oil and fry them untill they mush down then add sliced mushrooms and lashing of black pepper. It is great on toast, or with a fried breakfast. YUM!

Homegrown ones are best - raw. Otherwise, cooked - use loads of tinned tomatoes as basis for sauce in casserole type dishes. Really not keen on shop-bought fresh - I find them tasteless.
