I have a few pieces of Tilapia in my freezer and I need to make something from them before they go bad. I'm interested in baking or frying, something that doesnt require a lot of ingredients and is easy to make. Hubby and I dislike greasy stuff, but would love for it to have moisturer sealed in. I'd greatly appreciate some recipes! Also what does Tilapia go best with, rice, potatoes, pasta, etc??

I love Talapia - here's a good, simple recipe.
With a bit of olive oil, or non-stick coooking spray, grease a 9 X 11 baking dish.
Lay two slices (on top of each other) of prosicutto (Italian ham) in the pan.
Place a fillet of fish on the two slices - put 2 tablespoons of chopped red peppers on the fish and spread it evenly.
Drizzle with lemon juice and a bit of hot mustard.
Roll up the fish in the prosicutto and secure with a toothpick.
Drizzle a bit of olive oil over the roll and season with salt and pepper.
Bake in a 350° oven for 30 minutes.
Serve on a bed of rice pilaf and away you go.

You can cook tilapia in just about any way. I fixed some the other night and I simply drizzled a little olive oil on top the seasoned it with Old Bay and baked it at 350 for about 10 minutes. I also fried some for my kids. You could poach it in a little white wine and lemon juice, broil it, bake it. Oven fry it. Heck Tilapia is so mild you can do almost anything with it. I have kicked it up a notch to quote Emeril by covering it with salsa and baking it.

I prefer to serve Tilapia with Rice, and something green, a salad, asparagus, sauteed spinach, green beans, broccoli. I dont' plan meals I open the fridge and see what I have and go from there. I made my exhusband crazy with that.

Let you imagination run wild. Food is flexible and if you lived at my house you'd know the true meaning of that phrase, I rarely fix a dish the same way twice.

We love it and my husbands favorite talapia dish is when I bake it topped with butter, dash of lemon juice and Parmesan cheese, salt & pepper.
