Elohim is the Hebrew used, which indicates plurality. Though it does not imply "gods". It's a compound unity. The Bible describes God as a triune being (Father, Son, Spirit).
"In the beginning, God..." means to me exactly what it says: that before there was anything else, there existed the triune God.

In the beginning to me tells me that means God always was and He wanted to bring all things into existence as an artist paints his or her dreams. And they share it with others to see and enjoy. I'm so glad He made everything a reality. We wouldn't exist if He hadn't. And so just as a sentence has a beginning and end, so does "IN THE BEGINNING GOD.

In the beginning God created the heavens and the earth and the earth was without form and void. Genesis 1:1
To understand a verse one must take the whole of scripture, not just the piece one wants to use. Use it all or leave it all alone.
This verse defines the beginning of the written Word of God, and opens up the panaramic scenerey of creation. This is a faith based statement. It was to be a theological statement that said "In the beginning of all things God created the heavens all of them, and he created the stars all of them and he created the earth".

If you translate the english bible back into Hebrew it actually reads 'In the beginning Elohim' and Elohim is a plural word which actually means 'Those who came from the sky'.
So what this phrase is telling me is that it was A group of people who came from the skys that created all life on Earth. It was this group later on after they created us in their image, that we mistook them for powerfull beings later turning them into Gods.
