Go to allreceipes.com; there recipes are rated; so you know if you have over 100 reviews and they are five stars it's a great recipe....hard to mess upl. Also, you can list a few ingredients you have on hand and it will pull up ideas for you. You can view by heathly recipes, easy ones, etc. Check it out. I never get a recipe book out any more since I found this website.

Marinated Summer Salad

1 small zucchini squash
1 small yellow squash
1/2 small onion
18 baby carrots
1 medium red pepper
12 cherry tomatoes
1 medium cucumber
3 cloves fresh garlic
1/2 cup olive oil
1/2 cup white or seasoned vinegar
2 teaspoons granular Splenda (or 1 packet)
1 teaspoon salt
2 teaspoons fresh cracked pepper
1/3 cup fresh minced herbs of choice

Directions:
Prepare vegetables by washing, peeling and cutting into strips or other portions.

Place prepared vegetables in a shallow covered dish.

Place garlic, vinegar, herbs, salt, sweetener and pepper in a blender and puree until smooth.

Add about 1/4 of the oil and blend on high for two minutes. Continue adding oil slowly until all of oil is incorporated and the dressing is creamy and thick. Pour dressing over vegetables and chill until time to serve. Serves eight.

Per serving: 7g carbohydrates; 2g fiber; 0g protein; 14g fat; 155 calories

If you want a great tasting middle eastern dip that you can eat with pitta bread or Italian (crusty) bread ... here it is: (it's quite healthy too!)

put five or more big eggplants in a baking tin and put them in the oven... turn over a few times till you feel that they're done (you'll know when the skins are kind of charred) Take the skins off and mash the flesh into a pulp... add Tahini (one or two tbsps), garlic (2 or 3 big cloves), salt, lemon juice (of half a lemon) and olive oil. your friends will love it, mine do!

I always do Rice-a-roni with hillshire farms smoked sasuage rounds around the edge. (Make sure to put it in a 9 x 12 glass cake pan) It looks and tastes great, very inexpensive and real easy and fast to make and goes over great. Never had a complaint yet.

Marinate firm tofu in teriyaki sauce and stir fry it sans oil...use Pam...and it goes great over a salad of mixed greens!!!! Season as yuo would like to have it and you will be amazed at the taste!

BBQ chicken in the crock pot. Start early if it is the next day. You could make potato salad, or egg salad sandwiches. etc.....n
