But where the devil do you find time? I find when I'm busy doing things, even though I'm often hungry, it's just not convenient to break off and go eat something. As a result, I keep stuffing in massive meals at the end of the day. Healthy ones, usually, but still... how do you break that cycle? And for variety (and portability), what sort of nibbles can you suggest I bring with me? Fruit and muesli bars are great, but I'd like a change now and then.

you can't munch a bunch of carrot sticks, a few broccoli flowers, a hand full of nuts somewhere in your busy schedule? you can't take a couple minutes to enjoy a nice nori roll, cup of soup? one or two of those little min-wraps you can make a box of in the morning? lot's of opportunity for variety there. or you could make a box of sushi, all sorts of possibilities.

Try what I have done. When I lost 23 kg the other year, I changed to having a big meal at breakfast, a substantial meal at lunch, and just nibbles in the evening. Having your main protein early in the day means that you burn a lot off before lunch. Then you have your main carbs to see you through, and in the early evening just a light meal. I usually have some fruit and bio-dynamic yoghurt (that isn't stuffed with milk powder to pad it out), or a bit of cheese and rice crackers. I have maintained 90 kg for over a year now, and that's right for my skeletal size and age.

You don't have to sit down and have a meal, just some smart snacks! There are so many options out there for snacks throughout the day!!! Try some breakfast bars, like South Beach Diet. There are also many 100 calorie pack kinds of things... I love those! If you like popcorn, I highly recommend a 100 calorie pack, there is a lot of popcorn in one of those little things, and it fills ya up!!! Also, try some Ensure drinks, yogurts, cottage cheese cups, string cheese sticks, pudding cups... just keep an eye out for sugar and fat!!
You want to make sure you have a good breakfast, with fiber and protein, and make sure to eat every 3-4 hours... And make sure to have a good source of protein at lunch, and a huge serving of veggies, like a salad!
Good luck!!
