Why there is no frequency before 87.5 or after 108?

There is, but under international agreement the frequency of 88 through 108 have been designated as commercial radio Frequency Modulated broadcast. Channel six audio is below that and channel seven audio is above that. This stops two signals from occupying the same frequency and making both unintelligible. There are several type of modulation including Amplitude Modulation, Pulse Modulation and Phase Modulation. Only AM and FM are commercially viable.
Perhaps the American Radio Relay League web site may be able to provide more info for you. Their handbook will explain, in detail, all the differences and how to build each type of transmitter.
