The appelations are so old that most wine makers are eternally vigilant when it comes to quality. There was a time when there was a lot more blending from different appelations going on, and when greedy winemakers put a lot more chemicals in their wine. But having to compete against top growers in Australia and the Napa Valley means that all French vintners really had to pull their socks up.

Now, yields are reduced in Burgundy to ensure only the grapes that are in tip-top shape go into the wines. The only other place where this really happens is at boutique vineyards in California.

This answer is somewhat subjective because everyone's tastes are different but the reds(pinot noir) from Burgundy have distinctive tastes that you don't find anywhere else. If you are a true fan of pinot noir you need to experience a good Burgundy from a good producer, preferably from a better vintage. Be prepared to spend some money!! Also Bergundian reds are some of the best matches for food.

The cépage as the french put it, that is the grape variety, the soil, the vineyards which are exposed to sunny slopes, the right temperature and humidty go in making Burgundy the best wines.
