Seaweed wrapped rice + avocado comes out looking pretty fancy. You just chop up some avocado, cook some seaweed (boil in water till soft), and wrap the cooked rice and avocado inside it.

Else, you could try an fusian recipe... those are easier... here's one that I like.

2 tblspthinly sliced green onion

peanut sauce
1/4 cuppeanut butter

Cook ramen noodles (but not the seasonings) in boiling water for 3 minutes.

Make your stock using chicken broth (bring to a simmer). You can add any of these ingredients (must be at least 3): chopped red peppers, diced onions, chopped chinese cabbage, mushrooms, brocoli, snow pea pods, shredded chicken, tofu, or bbq pork. Turn off the stove. Lastly, add shrimp, chopped green onions or even shredded lettuce if so desired. This is to prevent the items from being over cooked. Salt and pepper to taste.

Combine all of the ingredients and you got your self a delicious, nutritious and tasty dish.

Ramen noodles in my country, is traditionally served for breakfast, but eat it any time you like.

Take it from me, a true Asian.

one single dish? Either fried rice or noodles. heat oil, fry bit of chopped ginger, add minced garlic. Add marinated pieces of meat (pork/beef/prawns/squid), toss a little. Add in rice/noodles, add soy sauce to taste. Push aside then break an egg in the centre add pepper, put noodles/rice on top immediately then stir fry breaking the egg into small pieces. Add more soy to taste. Optional, add a bit of chilli paste/sliced chilli before adding noodles/rice.

chicken, beef or shrimp stir fry, you can pick your own flavors, own veggies and meat, cut the skinless chicken breast in thin strips or do the same to beef, often you can buy the beef already cut in strips for this. you can often find already cooked and frozen chicken done for this purpose as well, or a pkg of shelled cooked frozen shrimp, heat some oil in a deep frying pan or wok. you want it fairly hot, season the oil if you like with hot peppers or whatever kind of seasoning you like, i often do garlic and soysauce. toss in the thin cut meat, and fry till its browned, stir all the time with a wooden spoon. then toss in some veggies, you can buy various frozen veggie mixes now, and stir those with the meat and seasonings you like till they are crisp, if you use things like broccoli make sure its cooked enough to suit you, you can pour this over cooked rice or oriental noodles, like rice noodles or celophane noodles. fast and easy. once you have the simple version down you can branch out with your flavors by looking in the oriental foods section of your grocery store.
