chop up some apples. or even other fruits like berries or pears. apple sauce is good to keep the muffins moist and yum. you can also use fruit juice concentrates
nuts aswell, pretty much all sorts of nuts. the ones i like best are almonds and pecans.
add spices like cinnamon and nutmeg to keep it tasty and not too bland. even a touch of vanilla would be great.
