What happens to frozen potatoes when they thaw? More specifically, what happens to a frozen potato? Can it still be eaten after thawed? My friend stores potatoes on his balcony. They were unintentionally left out there during the snow, rain, and dry cold. He noticed today that the potatoes were soft and wet. The flesh was flaccid, but was spotless and smelled fresh. Are they still edible?

if they were soft and/or growing eyes then they are not edible-they are poisonous. potatoes are only edible until they grow eyes and/or become soft. mostly it's the eyes-but there are rare cases of the same effect with just a soft potatoe. toss'em or plant them. when they grow eyes you can cut them into pieces according to the amount of eyes and put them in soft dirt and they can grow to be pretty big.

Unless they're cooked & eaten soon after they're thawed- those potatos are going to rot.
