When I bake chicken the first time around, I boil it first for about 20 minutes, then put it in the oven. It's very moist that way, and will stay moist when reheated later.

Also, for reheating, use the microwave and place the chicken in a covered dish to keep the moisture in.

I like to use some real butter and a little bit of chicken stock. This way it stays moist.

Always keep a can of chicken stock in and use it for things like that. Otherwise a little water with seasoning like ranch dressing or soy sauce with a little honey and mustard in it or bar b Q sauce and a bit of water.Also a can of mushroom soup with a little milk and throw in some noodles.

INGREDIENTS:
4-6 oz. chicken, diced
2 T. plus 1/3 cups honey mustard salad dressing
1/2 head iceberg lettuce, shredded
1/2 head napa cabbage, shredded
1 carrot, peeled and shredded
3 green scallions, thinly sliced
1/2 cup crunchy chow mein noodles
PREPARATION:
Toss chicken with 2 tablespoons of honey mustard salad dressing. Mix together lettuce, cabbage, carrots and remaining salad dressing. Top with chicken, chow mein noodles and scallions.

put it onto a plate and sprinkle a little water onto the top of the chicken and cover the chicken with a napkin.

just wet the chicken , by sprinkling some water over it before you warm it. sprinkle, dont flood.

You can simmer or steam it in chicken stock.
