Homemade Egg Rolls

Rollie,(one of the little Phillipino boys I worked with) used to bring these to our pot lucks.I always think of him when I make them.This is a great potluck item,Great for Super bowl,or good for making and freezing for a quick snack,pop in microwave and go. Takes a while to make,but worth the effort.

EGG ROLL BATTER
2 cups all-purpose flour, plus
1 tablespoon all-purpose flour
2 tablespoons cornstarch
1 teaspoon salt
1 egg, beaten
1 teaspoon sugar
water
peanut oil
FILLING
1 lb lean ground beef
1/4 cup butter
4 cups finely shredded cabbage, partially cooked
1/2 cup minced green onions
1/2 cup minced celery
2 cups canned bean sprouts, drained
1 teaspoon salt
1/8 teaspoon pepper
1 pinch sugar

Ground Beef Appetizers
BATTER: Sift flour cornstarch and salt, add egg and sugar,and gradually add water till you have a very thin batter.
Using a pastry brush,grease a 6 inch skillet with peanut oil.
pour 4 Tablespons of batter in skillet,tilting pan to spread batter over entire bottom of skillet.
Cook over low heat till edges peel away from sides of pan, gently turn and cook other side.
Remove from pan and let cool.
FILLINGBrown beef in butter.
Add vegetables& Seasonings to meat.
Cook for about 5 minutes.
Drain and cool.
To Assemble and FryPlace a heaping Tablespoon of filling in center each wrapper.
spread around to about 1/2 inch from edges.
fold up sides and roll.
Sealing with flour and water.
(1 Tblsp. Flour,2 Tblsps. water.) Fry in Deep Hot Fat (360 degrees) until Golden brown.
Serve with sweet hot mustard,sweet and sour sauce,or Worcestershire sauce or your favorite sauce.

Ingredients:
3 c Oil
2 Cloves garlic, minced
1/2 lb Lean pork, ground
1/2 lb Shrimp, shelled, deveined, minced
3/4 c Minced water chestnuts
2 Carrots, minced
1 c Minced celery
1/2 c Green onions, cut very fine
2 tb Soy sauce
1 ts Salt (optional)
1/2 ts Freshly ground pepper
Spring roll wrappers, 8" in diameter
Sweet and Sour sauce
Directions:
In a wok or pan, heat 2 tb oil. Add garlic and stir until fragrant, about 5 seconds. Add the pork and shrimp and stir-fry for 1 minute. Add the water chestnuts, carrots, celery, and green onions. Stir-fry for approximately 2 minutes, or until the vegetables are tender but still crunchy. Add the soy sauce, salt, and pepper. Stir. Remove from heat. Drain excess moisture from pan.
To assemble the rolls, place about 1/3 c of the filling on the lower third of the wrapper. Fold the portion of the wrapper nearest you over the filling until just covered. Turn the wrapper again to enclose the filling securely. Moisten the edges of the wrapper with water or a mixture of cornstarch and water. Fold over the corners and press down firmly to seal, making an envelope. Moisten the flap of the envelope with water and turn, rolling firmly into a 1-inch cylinder. Seal firmly. Set aside, seam side down. Repeat until all the filling has been used.
Heat oil in a wok to 375 degrees. Place 4 or 5 rolls at a time in the hot oil. Deep-fry until crisp and golden. Remove with a skimmer and drain on paper towels. Serve hot with Sweet and Sour sauce.
Rolls may be prepared ahead of time and frozen, then fried when needed.

PHILIPPINE ROLL
1 c. flour
1 1/2 c. water
Mix and roll out paper thin, cut with glass and roll again.
FILLING:
1 1/2 lbs. ground beef
1 spring onion, top & bottom
1/4 tsp. salt
1 tsp. fresh garlic
1/3 cabbage, grated very fine
2 tbsp. flour
Dash of pepper
Mix all ingredients together and place in wrapper. Freeze. To cook, place in oil and cook very slow for about 30 minutes.

LUMPIA (EGG ROLLS)
--recipe came from a lady who has a Filipino DIL
1 chicken breast cooked
8 oz. cooked pork
1 cup finely diced celery
8 oz. cooked shrimp
1/2 cup chopped green onions
4 oz. fresh bean sprouts
2 tsp. salt
8 oz. cabbage
1/2 tsp. ground black pepper
4 oz. green beans
2 tbsp. light soy sauce
2 tbsp. peanut oil
1 packet egg roll wrappers
4 cloves garlic, finely chopped
Bone skin and dice chicken breast. Dice pork finely. Roughly chop shrimp.
Wash bean sprouts and drain. Pinch off straggly brown tails and chop roughly.
Shred cabbage finely, string beans and cut into very thin diagonal slices.
Heat oil and fry garlic over low heat for one minute, then add chicken, pork, and shrimp and stir fry one minute before adding beans. Stir fry for two minutes, then add sprouts, cabbage, celery, and onions. Toss and cook until tender but still crunchy.
Add seasoning, mix well, then drain away excess moisture.
For fried Lumpia, put filling on egg roll wrapper and roll up, moistening tip to seal. Fry in deep oil heated to 375 for two minutes or until golden brown and crisp. Drain on absorbent paper and serve with favorite sauce. Enjoy!
