I saw this recipe in my local grocery ad, and have found it online at several sites. However, none list in the ingredients the "juice concentrate" it says to add with the bananas. I found some sites credit the recipe to the book "International Fish Cookery". Maybe someone out there has the book [issued 1979 by Lou Seibert Pappas] with the recipe. I've never sauteed bananas before, nor found a recipe similar to this one to know how much or what kind of juice concentrate to add.
Thanks for any help ya'll can give me.

ok, I'm sure it's citrus, and probably wouldn't matter too much what kind (altho probably lemon or lime best), but how much?? Thanks for quick responses.

Lemon or Orange would work; the point is to probably toss the bananas in the juice to prevent them from browning. Food high in Vit. C prevent browning.

You may even have OJ concentrate in your freezer!

Mahi-Mahi with Sautéed Bananas

Ingredients

1 lb mahi-mahi, swordfish, or other white-fleshed fish fillets

salt and white pepper

cornstarch or flour

2 Tbs butter

1 Tbs safflower oil

1 tsp curry powder

2 bananas peeled and sliced on the diagonal

1 Tbs chopped pistachio nuts (optional)

1 lime or lemon cut into wedges

Directions
Season fish with salt and pepper and dust lightly with cornstarch. In a large frying pan, sauté fish in 1 tablespoon of the butter and the oil until flesh of fish separates when tested with a fork. Transfer to a heated platter and keep warm. Melt remaining butter in pan, add curry and bananas, cook 1 minute. Turn over and add juice concentrate, and cook 1 minute longer. Spoon over the fish and sprinkle with nuts. Garnish with lime wedges.

I would almost bet it is any citrus... lemon, lime, orange, even mango and papaya would be awesome. Mahi lends itself to fruit very well.
