depends if cheese is used. I'll give you a few ideas, cheese based and not.
Cheese will obviously make it taste better but here is what you do regardless.
When the potatoes are done boiling, do not drain them until the other ingredients are done. I will use portabello mushrooms, garlic, parmesian. I process the the mushrooms and garlic until pretty smooth and then sautee. Right at the end I mix in the cheese. These veges are sauteed in plenty of Canola oil. Once they are ready, I drain the potatoes, begin the mashing, and add the oil/veg mix. If you have enough oil, it works just fine.
Now to go a little southern, I would obviously salt and pepper this oil mox nicely. I would also, process and sautee onions for quite along time. The longer, the sweeter. Same deal, then just mix them.
Other southerns vegetable and herb ideas, Dill, Chedder, Garlic.
Cayenne, Garlic, Red Bell Pepper (sautee long time)
Just be creative, all you need is oil and some flavor. I have not used milk and butter in years.

Boil potatoes in water. Boil some eggs. Mash potatoes and add small amounts of sugar until it reaches the sweetness level you like. Chop the eggs and mix gently into the mash potatoes. This is a recipe one of my husband's military sponsors made for us when we first moved to Florida. She was from Korea.

I have a friend that is lactose intolerant so I used chicken stock to mash the potatoes.. another friend suggested adding garlic salt when mashing the potatoes too... makes them really tasty when you are having roast beef.

Any liquid, and any oil. You don't really need the oil but it adds. You can use skim milk and add a healthy oil like olive. Sesame oil could be interesting, but not too much. You can add anything at all to mashed potatoes, so be adventurous. You really can't get it wrong.

Use some of the water you boil them in.......then pepper and instead of salt use Goya Adobo con achiote seasoning. Or you can use the salt and a little garlic powder. That Adobo seasoning can be found in any grocery store and is a GREAT all-purpose seasoning.

or just plain water from the potato that you boil.
that's the southern way.
you can use chicken broth to add flavor and mash them.
I prefer milk.
my dad perfers chicken broth
hubby prefer margerine

Just stick to the potatoes and milk and black pepper. Use a handheld mixer and you'll be fine. Keep it simple and a bit healtheir.

1) any chicken/vegatable stock
2) Cream cheese - garlic/herb flavor is good
3) milk and parm cheese
4) milk, cheddar cheese, bacon bits and green onion
Sweet potato
1) cream cheese, a pinch of brown sugar and a touch of cinnamon
2) milk, honey, and a bit of green onion
