Saran wrap it and put it in the freezer, and when you want to eat more, make sure you put it into the fridge the day before you eat it so the bread will be thaw by the time you eat it.

Freeze it and take it out the morning you ned it to let it defrost. Or eat the bread you made and make it again the night before!

WOWIE! I am a stickler for REALLY fresh bread. Your only hope of preserving a really soft, fresh loaf is to vacuum pack it. But don't squash it..
I'm REALLY picky when it comes to bread...

you are going to have to freeze it. but suck air out of the bag to keep frost out it will thaw fine.
