I'm getting confirmed in April and we have to do community service. I was thinking it would be fun to make blankets and bring them to some sort of shelter or something. How do you find that type of place? I live kinda in the Minniapolis area.

search online or look in the phone book for shelters. Then call them and ask to speak to a supervisor or managing director.

There are several organizations and people who are working on rallying people to send homemade/handmade items to the troops in Iraq, to premature and sick kids in hospitals, etc. Try searching on Google or like the other person said contact local shelters. If you can't find them on the Web, try your local city/county government.
