the imitation crab meat is made from cod and pollack and just other fish. It's then "colored" with that pinkish stuff to resemble crab.

Imitation crab is a type of fish. And that it has "extracts of crab" should be a dead (no pun intended) giveaway that it's not vegetarian, as fish are not at all vegetarian.
