I am trying my hand at cake decorating, my first. I need to know about the glazing with the apricot jam(how long to set), is fondant and sugar paste the same, and can I fill a cake and then cover with fondant/sugar paste or should I use regular icing or frosting?

fondant = sugar paste

to glaze w/ apricot jam, just melt it slightly, so it's thin, then brush it on. You can use a ring of icing around the layer edges to help hold it in.

You can fill it w/ apricot jam, then ice it w/ frosting or fondant; your choice. If you go the fondant route, you will need a thin layer of buttercream icing to help the fondant stay on and seal nicely.
