Do not trap yourself into a job that you hate. You will always be miserable.
You need not quit your present job to either attend night classes at your local college or seek another job - it's difficult to look for work while you are presently employed, but it's not impossible. I've done it a few times.

Keep your job and check out different schools. A lot of community colleges offer night classes and some even have weekend classes. You can also look into a technical school. Depending on the program (medical assistant, etc.) it may only take about 18 months. You wanting to further your education isn't unfair to your husband. It would be unfair if he expected you to remain at a job you hate the rest of your life.

I understand the need for both spouses to be employed. Especially when they are just getting started.
You should talk it over with him. Maybe you could start with some part time education so you could still work. Or, maybe you could find a different part-time job that would still give you enough income to work on your education.
Maybe he could work 2 jobs until you got the education? Then with the better job because of your education, then he could work on his education and eventually you would both have good jobs?
I speak from experience. My wife and I both were working at entry level jobs. Mine had some upward mobility to it, but hers didn't. She quit work and went back to college. I took a part-time job along with my full time job. After she got her education and got a much better job, she told me that it was my turn to go to school. I grinned and told her I was doing exactly what I liked to do and never was very good at school.
We have enough money that we don't do without anything. We don't have expensive desires, but don't want for anything.
