First you can start with an egg omelet...using whatever you and your mom like...suggestions: cheese, tomatoes, onions, diced ham, broccoli, etc. what you add to the omelet is your personal perference and likes...the possibilities are endless.
You can make any other the following: french toast, waffles or pancakes.
Hint: Slice a couple granny smith green apples and cook in low-medium heat with butter. Once the butter is melted add cinnamon and sugar. Frequently stir and cook until the apples slices are slighty soft. Add on top of waffles or pancakes YUMMMM! Don't forget the whip cream :P
Another item you can add to your brunch is breakfast potatoes or hash browns. If it's easier for you can purchase these in the frozen food section, I suggest the Ore Ida brand.
Oh yeah, don't forget the sausage links and/or bacon (turkey bacon for a healthier choice).
For beverages, depending on what you mom likes you can have orange juice, coffee, hot chocolate or Mimosa (orange juice with chilled champagne)
Lastly, slice some fresh fruit....oranges or cantaulopes or if you can find some fresh strawberries.

what about eggs benedict. you can easily make that for under 20$ ( i am in canada)
premix hollandiase sauce 2 packages
english muffins
eggs
ham - i love capicoli on my benny
3 potatoes
bake the potatoes in the microwave in a plastic bag ( just wash pierce holes in them and they are good to go)
then tomorrow all you have to do is fry them with a little oil or butter. poach the eggs toast the muffins and make the hollandaise sauce.

Eggs Benedict (you can buy pouches of Knorr Hollandaise Sauce, very easy to make) and fruit salad. One of my favorite brunches (but I can eat Eggs Benny any time of day, lol).

A nice omelet with a you-baked-it coffee cake. Really good coffee with real cream available. Fresh OJ. That'll do it.
