Does beef really last up to a year frozen?

It can be kept for up to 3 years, but the quality deteriorates as the beef is defrosted, much of the blood will drain out and the fibres begin to break down faster than normal This affects the taste and makes it somewhat unpalatable. There is no risk of infection or poisoining if you use good aeseptic handling methods. But if your thinking of using old meat for ther next dinner party forget it It will taste like old carboard boxes.

Here is one chart on keeping your beef frozen and for how long you can do it. However if the meat is double wrapped in butcher paper, most of those cuts listed will last longer than they quote. Also, if you are going to be freezing a lot of beef I would recommend you buy a good vacuum sealer. Using one of those I have kept beef frozen up to 2 years with absolutely no freezer burn.
